Guy's Guide to Late Night

The Food Network star shares his picks for go-to comfort foods

When it comes to deciding what food gets his seal of approval, Guy Fieri is meticulous. The spiky-haired celeb chef and his research team will weed through up to 75 locations just to find one spot to be featured on his Food Network hit, "Diners, Drive-ins and Dives." But when it comes down to it, there's really only two things that matter: "Number one, they gotta be able to do food ... Number two, they have to have some character," Fieri says.

And that same type of simple scrutiny is perfect for deciding on a late-night snack menu."Everybody wants to have the bomb wedding and do it their own way," Fieri says.

For late-night snacks, the key is to simply have food people love to eat. For Fieri, it comes down to two types of food: greasy-and-salty and sweet.

"No one will turn down pepperoni pizza or buffalo wings," Fieri says. For vegetarians, tempura veggies or croquettes work well.

As for sweets, Fieri says cotton candy goes over great, and you can't go wrong with a sundae bar. The trick is having an assortment of quality goods. "More is not better; quality is better," he says. "My motto is go big or go home."

That includes bringing in fare from a favorite local joint. Out in California, the cookout trailer from burger joint In-N-Out is a huge hit, says Fieri.

"I think the expectations of how it's all supposed to be have loosened up," Fieri says. "I think the wow factor plays into this more."

As for Fieri - who served a traditional Italian meal at his own wedding - tacos, pizza and something sweet would be how he'd do late-night at a wedding today - and don't forget the wings. He suggests frying up wings on their own and then having a variety of sauces available - such as tequila lime or garlic butter - so guests can flavor their own.

"A wing station would be out of bounds!" he says.
