Bypassing the sit-down dinner for smaller areas of haute cuisine. Here’s how to pull it off with panache

When it came time for Erin Casey to plan her own wedding, the co-owner of Bella Bridesmaid of Chicago and Milwaukee opted to maximize the time for guests to mingle and put the food on the move.

“We wanted to serve foods that were easy and fun to eat but also allow guests to visit and chat about the Chicago neighborhoods the food represented before they sat down.

“After attending so many weddings, it was fun to mix it up and do something a bit different,” says Casey.

Dinner by Design

The key to successful stations? Opt for fuss-free, flavor-friendly meals. Keep sentiment alive by linking your choices to places that are special. Get creative when sharing your appetite for love. Honor the east coasters and think Flavors of the Sea with shrimp cocktail and bacon-wrapped scallops. It’s Cowboy Cool with Texas style barbeque. And don’t stop with foods that fit on a plate, select a themed beverage to accompany the station. From Mai Tais to mint juleps, a signature cocktail accessorizes any entrée.

In honor of Chicago’s Little Italy, Casey opted for a Taylor Street station to serve the Italian sausages with peppers; at Comfort’s of Home, mashed potatoes and macaroni and cheese warmed mouths and souls.

Blend Tradition with Trend

When serving food station-style, you can still keep some order (and a schedule) by serving a seated salad course. Guests can size up which main queue to head to after the leafy first course, and for more conservative guests that aren’t used to the station situation, a served salad satisfies traditional tastes.

To Go

Since it’s self-serve, make sure to request the catering manager put a sample plate aside for the bride and groom. As Casey found, “No matter how hard you try, it’s impossible to eat enough when there are so many people around to visit.” While guests will enjoy the time on line, the main couple needs to keep moving so pre-select someone to pile a plate high.

Surprise Station

From first dance to the final song, guests burn calories busting a move. Nothing revives a dance floor more than a late night food infusion. Keep one station secret until the very end. Rolling out a pizza or hot dog cart keeps the mood fun and friends’ bellies full.
